Weekend Comfort Food-Easy To Make Chicken Pot Pie
The holidays are here and we have the perfect weekend comfort food recipe with our easy-to-make Chicken Pot Pie. Growing up Chicken Pot Pie was what going to grandma’s house was all about. There was something comforting about making the drive to her house and running through the door as the hearty aroma hit me as soon as a came in. In fact, it was only at my grandma’s house that I would willingly eat anything and everything without a fuss because let’s face it, everything better when grandma makes it. Fast forward to my own kids growing up after a hectic week I needed something that was easy to make and still reminded me of her house and there’s nothing that says weekend comfort food than Chicken Pot Pie. Not only is it quick to put together, but it also’s easy to change out and put in seasonal vegetables and if you make a double batch, then it freezes beautifully or can be packed and ready for Monday’s lunch. Let’s get cooking so your Chicken Pot Pie can start simmering and be ready for your family to savor this weekend.
Serves: 6 Cook Time: 30 Minutes
1 tablespoon butter
2 tablespoons cornstarch (thickener so use what you like to thicken)
1 tablespoon garlic 2 cups chicken broth
2 1/2 cups heavy whipping cream
1 1/2 cup of your favorite in-season vegetable or you can even use frozen mixed vegetables
1 Package Perdue Chicken
1 – 16oz package pasta
3 teaspoons pepper
1 teaspoon salt
*(or you can use any grocery store rotisseries or pre-cooked chicken)
Bok pasta as directed on package. Shred pieces of chicken. Set Aside.
In a saute pan, add in butter, garlic, and turn to medium heat. Mix a little cornstarch with the broth to make a slurry.
Add broth and slurry to the pot and whisk. After whisking stir in the heavy cream. Bring to a low boil and reduce heat to low.
Once the sauce starts to thicken enough to coat the back of a spoon add in the chicken. Next stir in the vegetables. Add salt and pepper.
Drain pasta and toss in the sauce with vegetables and chicken. Top off with more fresh cracked black pepper.
