Sweet Treat For Valentine’s Day- Strawberry Short Cake

Sweet and tasty, melt in your mouth goodness our simple to make, this is the perfect dessert to show everyone just how much you love them or better yet. take it to work with you to say a special “Thank You” to your co-workers.
Everyone loves strawberries and our cake comes with an unexpected ingredient by using unsalted saltines for the layering giving it that unexpected surprise but with the first bite, you’ll be asking for seconds, and possibly thirds because it’s just that good. Add in all the other melt in your mouth goodness and you’ll know why we call if Strawberry Short Cake. But don’t take out word for it-try it for yourself but trust me when I say, make more than one because this disappears before your eyes.
Let’s get started:
Ingredients:
2 sleeves of NON-SALTED Saltine crackers
2 packs of Vanilla Instant Pudding
1 container of Cool Whip
1 package of frozen strawberries ( or if strawberries are in season, use fresh)
½ cup of sugar
Strawberry Purée instructions:
-in a pot on medium/low heat, add your frozen strawberries.
-as the strawberries unthaw, start pressing them with your potato masher.
-once the strawberries have all been mashed (you should now have a soup consistency) add the sugar.
-let your mixture reduce, then refrigerate.
Saltine Cake instructions:
-make your vanilla pudding per the instructions on the packet.
-in a rectangular glass pan, start by laying a base of saltine crackers.
-on top of the crackers, add a thick layer of vanilla pudding.
-on top of the pudding, another layer of saltine crackers.
-on top of the saltine crackers, a layer of cool whip.
-repeat layers one more time (crackers, pudding, cool whip)
-let sit in the refrigerator overnight.
-serve a piece of cake with a few spoonfuls of coulis overtop, it is simply divine.
