A new year is here and the perfect way to kick it off is with our Squash Fettuccine With Grilled Chicken from Perdue Farms Not only is it easy to make and perfect for the entire family but uses our very favorite chicken from the sponsors of our post, our friends at Perdue Farms and if it’s from Perdue Farms then you already know that it is a name synonymous with quality and great taste all rolled into one. Perdue Farms is a name I grew up with as did my kids and now my grandkids and it’s the name I trust when it comes to organically grown products that I know will be good for my family. Everyone knows that Perdue Farms is passionate about farming, land preservation, and healthy and nutritious food and for the past 100 years, they have carried this passion by specifically working with small family farmers to raise animals with care. But did you know that Perdue Farms is more than just chicken? The company now boasts a full line of premium protein products and brands, including Niman Ranch, Coleman Natural, Perdue Chicken, Perdue Harvestland, Panorama Meats, Spot Farms, Full Moon and more. But the best part is that in addition to making sure you are feeding your family a name brand that is synonymous with quality and one that has been around for over a century, that in. addition over the last 10 years, Perdue Farms has transitioned from conventional chicken & turkey production to becoming the #1 supplier in the U.S. for Organic Chicken as well as a leader in premium Beef, Pork, Lamb, Pasture Raised, Grass-fed, Heritage Breed, Antibiotic Free (No Antibiotics Ever), Non-GMO, Ever, Certified Humane, GAP & more.
To celebrate the 100th anniversary, Perdue Farms is on an exciting journey to becoming the most trusted name in premium proteins, and this direct-to-consumer initiative is our first step towards telling its story across all of its brands. To take them into the future they are not only working directly with small family farmers to raise animals with care but they have also started a new program that will deliver premium proteins directly to your door with the launch of their Perdue Farms’ new direct-to-consumer website. Let that sink in a minute-a way to have the products that you and your family have come to love delivered right to your house and in doing so is helping to support the Perdue Farms commitment to sustainability and our planet. Being thoughtful stewards of the environment is one of Perdue Farms’ most important social pillars and in doing so, they’re taking these steps to lessen their carbon footprint and protect our ecosystem:
- For every bundle shipped, Perdue will donate to the Arbor Day Foundation, which is working to replant damaged areas of our nation’s forests. This donation will help reduce the carbon footprint required to ship their products to you.
- Perdue has designed our shipping boxes with sustainability in mind. Every box is made out of 100 percent recyclable cardboard and insulated with Green Cell Foam®. Green Cell Foam® is eco-friendly packaging and is biodegradable, compostable, and made from high-grade non-GMO cornstarch that is dissolvable in water.
- With each delivery comes a reusable and recyclable grocery bag with every purchase which is perfect especially if you live in California or other states that now charge you for bags. It’s a great reminder to reach for their bag next time you go to the store to avoid using paper or plastic.
- A pollinator seed packet is also included in every box. Perdue Farms wouldn’t be able to produce the food that they do without bees and butterflies, which help to make one out of every three bites of food we eat. Plant the seeds to create a robust pollinator habitat near your home!

Now the only question is what will you make first and we have the perfect recipe for you to try with our Healthy and Hearty Squash Fettuccine with Grilled Chicken. Our tasty and easy to make dish features our Perdue Farms Chicken Breasts paired with our flavors of the garden. For this version, we switched it up by creating vegetable Fettuccine using zucchini and squash which makes it Keto and low carb friendly but it can also be made with traditional Fettucine noodles depending on what your family’s preferences. By adding in a few unexpected extra flavors to the sauce you will create a meal that your family will rave about and ask for over and over again.
2 ounces red onion finely diced
2 Romano tomatoes, finely diced
3 Tbl butter
1 Tbl olive oil
2 medium zucchini, cut into fettuccine sized noodles
2 yellow squash, cut into fettuccine sized noodles
1 cup white sharp cheddar, shredded
1/2 cup finely grated parmesan cheese
2 tsp corn starch and the following 4 spices mixed evenly into the parmesan
1/8 tsp nutmeg
1/4 tsp coarsely ground black pepper
1/4 tsp thyme powder
1 tsp garlic powder
1/4 cup heavy whipping cream
Gather and prepare your ingredients first. Making the squash into fettuccine noodles might be a little time consuming but they are worth it for their texture. This recipe cooks quickly and will benefit by everything being ready beforehand.
In a large frypan, melt the butter in the olive oil and saute the onion and tomatoes for about 2 minutes after the butter begins to sizzle.
Add the squash noodles to the onions and tomatoes while stirring to coat all of them well.
Stir fry for about 3 more minutes and add the cheddar cheese and let it begin to melt while stirring everything together, then add the parmesan and spices followed by the heavy cream.
Stir the mixture constantly while the cheeses melt and the sauce thickens. You want to soften the squash noodles but not turn them to mush, so just like with pasta, stop at the al dente’ stage. The sauce at this point should have all the cheese melted and should evenly coat the back of a spoon. The Roma tomatoes add a beautiful rosy color to the sauce
Serve with grilled chicken breasts from Perdue Farms, or we like them diced and served atop the noodles and sauce mixture. Even better, you can easily add in other seasonal vegetables depending on what’s readily available in your area depending on what time of year it is. It’s just that easy!
