Simple Delicious Dinner Recipe: Spaghetti Pie
Like most moms, I struggle every week to find something new and different to make for dinner. Given our busy lives it needs to be simple and quick to prepare, but healthy and delicious at the same time. Spaghetti Pie is the perfect solution. What kid doesn’t like spaghetti and meatballs? And what can be better than putting that in a pie? Serve with a salad and fruit and you have a meal the whole family will enjoy!
Spaghetti Pie – Personalize Just for Your Family
This recipe takes no time to prepare and is well suited for left overs. There are numerous spaghetti pie recipes available on-line and this dish easily lends itself to making adjustments based on your family’s taste. For our family, I used equal parts 90% lean ground beef and Italian turkey sausage. Mixing the meat component adds extra flavor, and using turkey sausage helps keep down the fat content of the dish. Want to make this dish on Meatless Monday? Substitute roasted vegetables or sauteed mushrooms and peppers for the beef and sausage. I also added fire roasted petite diced tomatoes with the liquid and some of our favorite Italian herbs. If you prefer you can add diced fresh tomatoes and whatever herbs your family prefers. You can switch out your pasta – I used a thin fettuccine noodle – or use a different variety of Italian cheeses. Customize this dish for your family and it will be a hit for dinner!
Spaghetti Pie Recipe
12 ounces cooked pasta, approx. 1 box of pasta
1 small onion, finely chopped (or 2 shallots)
3 cloves of garlic, minced
1/2 tbsp olive oil
1/2 pound ground beef
1/2 pound Italian turkey sausage
1 cup tomato paste (divided, 3/4 cup and 1/4 cup)
1 can fire roasted petite diced tomatoes (or 1 cup chopped fresh tomatoes, seeds removed)
3 large eggs, whisked
3/4 cup grated parmesan cheese
3/4 cup shredded parmesan cheese
1 1/2 cup shredded Italian cheese
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp dried basil
1/2 tsp dried thyme
salt and pepper to taste
Preheat oven to 350 degrees.
First, prepare your pasta. I used a thin fettuccine, but any long thin pasta will work. Place cooked pasta in a bowl and add 3 whisked eggs, 1/2 cup grated parmesan cheese, 1/2 cup shredded parmesan cheese, and 1 cup shredded Italian cheese.
Add 1/4 cup tomato paste to pasta mixture and combine.
Next, add 1/2 tablespoon olive oil to a large saute pan. Saute 1 finely chopped small onion (or 2 shallots) and 3 cloves minced garlic cloves over medium heat until onion is translucent.
Add 1/2 pound ground beef and 1/2 pound Italian turkey sausage and saute until cooked through.
Add 1 can fire roasted petite diced tomatoes and 3/4 cup of tomato paste. Stir to combine.
Add 1/2 teaspoon each of dried basil, oregano, thyme and parsley. Season with salt and pepper to taste.
Lightly brush the bottom of a 9 or 10 inch deep dish pie pan with olive oil. Spread 1/2 of meat mixture in the bottom of the pie pan. Layer pasta mixture on top of meat mixture and smooth to make even.
Add the remaining 1/2 meat mixture.
Top with 1/2 cup shredded Italian cheese, 1/4 cup shredded parmesan cheese and 1/4 cup grated parmesan cheese.
Place in oven and bake for 30 minutes or until top is bubbly. Remove from oven and let sit for 10-15 minutes.
Cut Spaghetti Pie just as you would a regular pie. Use a sharp knife and cut a slice of spaghetti pie.
If you do have leftovers, cover well and refrigerate for up to a week.
