Red White and Blue Parfait
6 ounces of cream cheese, softened
1 cup heavy cream
2 tsp lemon juice
1 1/2 tsp lemon extract
1 cup 1:1 Stevia powder
1 1/2 cups fresh blueberries
1 1/2 cups fresh strawberries
Wash the berries and let them drain completely in a colander while you prepare the mousse.
Soften the cream cheese in the microwave and add it to the heavy cream, lemon juice, lemon extract, and stevia powder in a mixing bowl. With an electric mixer, beat the mixture until soft peaks form.
Remove the leaves from the strawberries and slice or dice them to suit your design. Layer the mousse, the strawberries, and blueberries in alternating layers.
Garnish with either kind of berry or both. These can be made ahead of need and stored in the refrigerator covered with plastic wrap.
Depending on the size of your glasses, and how thick you make your layers, this recipe will make 2 or four parfaits. Any leftover mousse will keep in the refrigerator to add a sparkle of lemon flavor to other dishes.
