Ingredients:
Pastry:
2 cups shredded mozzarella cheese
1-ounce cream cheese softened
3/4 cups almond flour
2 tsp baking powder
2 tbl 1:1 stevia powder
1 large egg
Sauce:
8 ounce can of tomato sauce
1 tsp cornstarch
1/2 tsp oregano
1/4 tsp thyme
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp black pepper
1/8 tsp cayenne pepper
1/8 tsp salt
1 tsp 1:1 stevia powder
1/4 tsp apple cider vinegar
Toppings:
1 tbs minced onion
12 slices of pepperoni
1/2 cup grated mozzarella cheese
1/2 cup cooked breakfast sausage, in crumbles
Preparation:
In a small bowl, melt the mozzarella in the microwave on high for about 1 minute. Heat the cream cheese separately in the microwave for 30 seconds to soften it. Stir the cheeses together until uniformly mixed. Set this aside while you mix the almond flour, baking powder, and stevia in a separate bowl.
Add the melted cheeses to the almond flour mixture and add the egg. Using a stiff spatula, mix everything together to form a dough. This will take some effort to make sure everything gets evenly mixed. At some point, you may wish to use your hands to knead and pull the dough to mix everything well. If you do, vegetable shortening on your hands will help keep the dough from sticking to you.
Divide the dough into 4 equal portions. Cut two 6×6 inch squares of parchment paper. Place a portion of dough on one of the parchment papers and use the other square to place on top and roll the dough until it is about a 3/8 inch thick and roughly circular.
Transfer the dough to a parchment-lined cookie tray and repeat the rollout process for the other three portions of dough.
In a small mixing bowl, combine the tomato sauce with the spices and the vinegar. Stir until well mixed. Spoon the sauce on to the pizza dough and use the back of your spoon to spread the sauce evenly over the pizza dough.
Divide the shredded mozzarella topping evenly among the pizzas, and do the same for the onions, pepperoni, and crumbled sausage.
Bake the mini-pizzas in the oven at 350 F for 25 to 30 minutes or until the mozzarella has melted and the crusts are golden brown. Remove the cookie tray from the oven and let the mini-pizzas cool briefly before serving. If you wish, cut each pizza into quarters and arrange on a plate with fruit for a tasty breakfast treat.
