Easy Summer Salads To Make Shrimp and Rice Noodle Salad

Our Shrimp and Rice Noodle Salad is a crowd-pleaser for any occasion and whether you’re wracking your brain as to which of your favorite summer salads to make for the neighborhood block party,
or you’re in charge of the 4th of July feast, or are just creating something a little bit special for the entire family, one of the easiest of the summer salads to make is the heart-healthy and delicious Shrimp and Rice Noodle version, sure to be a hit with everyone. This easy-to-prep salad is the best of your summer salads to take to that special luncheon or bridal shower or any of the special occasions that happen over the summer and for those that may have allergies to shrimp, just switch out the shrimp for chicken and you have the perfect summer meal.
Shrimp and Rice Noodle Salad
1 ½ oz dried rice noodles
3 oz shrimp, cooked and cleaned
¼ cup snow peas, trimmed and halved diagonally
¼ cup carrots, shredded
2 tablespoons cilantro
2 tablespoons asian salad dressing
1 tablespoon dry roasted peanuts, chopped
Red pepper flakes to taste
1 fresh or dried plum, sliced thin
Cook pasta per package directions, drain and cool
Mix shrimp, peas, carrots, cilantro, and dressing
Toss with cooked noodles
Top with peanuts and plum slices
Serve & enjoy!
