Countdown To Halloween -Easy and “Eye” Catching Treats

How many classrooms do you need to bake for? With our Countdown to Halloween it is easy to “see”  how it’s that time of year when classroom celebrations take over and although I secretly wish to be assigned napkins and plates, I always find myself volunteering for the baked goods.

With about 24 hour notice I had to think fast.  What did I have in my kitchen cabinets?  What was easy? Decorations? With limited time and creativity at a standstill… I dusted off the kitchen aid mixer and baked because the countdown to Halloween was on!

Here is my simple no-fail (unless you burn them) Vanilla Cupcake recipe:

Ingredients:

2 cups of flour

1/2 teaspoon of salt

2 teaspoons of baking powder

1/2 cup butter

1 cup of sugar

2 eggs

1 cup of low-fat milk

1 teaspoon of vanilla extract

Heat your oven to about 350 degrees and I always use muffin liners rather than spraying the muffin tins.  Cream the sugar and butter and beat in the eggs.  Add the flour, baking powder and salt.  Mix well.  Add in the milk and vanilla.  Stir.  Bake for about 15 minutes (the oven will vary).

 To decorate – one class got the full Frankenstein with store-bought gummy eyes, iced hair, and mouth and the other classroom got spooky one-eyed aliens (due to an eye shortage).

How do you prepare for the Countdown to Halloween?

 

tip: I put cardstock in between the rows when I send the cupcakes into school so they don’t stick together.
