Ingredients:
4 boneless, skinless chicken breasts
2 large zucchini, sliced
1/2 head fresh cauliflower
3 large celery sticks, sliced
8 mushrooms, sliced
1 green bell pepper, sliced (you could use other colors as well)
2 large carrots, peeled and sliced into sticks
1/2 red onion, sliced into rings
4 Tablespoons butter, divided
2 Tablespoons Ranch seasoning
4 16-inch squares of heavy duty aluminum foil
Directions:
1. Preheat oven to 325 degrees
2. Tear off 4 large squares of aluminum foil – set aside
3. Wash and prepare veggies
4. On each piece of foil put chicken breast and season with salt and pepper
5. Add one-fourth of the zucchini, cauliflower, mushrooms, carrots, celery, bell pepper, and red onion
6. Sprinkle 1/2 Tablespoon Ranch seasoning over the top of ingredients and then put 1 Tablespoon of butter on top
7. Fold up sides of aluminum foil and seal tightly
8. Put foil packets into a 9×13 pan or a jelly roll pan and cook in preheated oven for 1 1/2 hours till chicken is done (the foil packets can also be cooked on an outdoor grill or over a campfire)
9. Remove contents from the foil packet and serve. Your complete dinner is ready!
